Fermentation Workshop - intermediate level**

Fermentation is one of the oldest ways of processing and preserving food.

Join us for an exciting workshop where you can learn the secrets of how to make healthy homemade fermented foods. Discover the ancient wisdom of fermentation and how it can enrich your daily food lifestyle.

Mieko, a Japanese fermentation nerd and the founder of ‘miso miso’, will show you how easy it is and give you some secret tips! We will ferment vegetables and learn a variety of fermentation techniques together.

Mieko's fermentation tastings are another highlight to look forward to!

This workshop is designed for those with prior experience making fermented foods or drinks like kombucha, but who feel unsure about advancing on their own. Deepen your knowledge, refine your techniques, and explore new possibilities in the world of fermentation!

Miso Workshop

Miso is a miracle spice paste from Japan for every dish. Here, we make miso together and then nibble on various miso variations!

Mieko showed us the basics and how to make miso together with a tasting of a variety of different miso variations. All ingredients are from organic farming.
The workshop is carried out by Mieko. She is a Japanese filmmaker and the founder of ‘miso miso’ living in Germany. Since 2019 she has been giving miso and soy sauce workshops in Switzerland and Germany and offers homemade, original Misos.

Sashiko - Visible mending Workshop

Repairing instead of throwing away – Sashiko is a traditional Japanese method of repairing or decorating textiles. We sew by hand, with a basic running stitch, no special previous knowledge is required. Through our handicraft, concentration and skill we give an object a new value, a personal expression and a new life. We learn about the history, principles and various patterns of this centuries-old Japanese technique and how to apply it.

Moreover, it is fun and relaxing to sew together.

The workshop will be led by Madeleine. She is a hand-craft teacher,  learned Sashiko from a Japanese textile artist and offers workshops in France and Switzerland.

Infos:

  • Please bring an item of clothing to repair or a textile object that you would like to decorate (bag, clothing, case, cushion cover, ...). 

  • Sewing needles, thread and mending fabrics are available or can be purchased additionally from Haraiso.

  • Lecture language: German, English and French

  • As each person brings their object and is instructed individually, the number of participants is limited to five. 


Japanese Knife Sharpening Workshop

From time to time, the best knives need a little attention. Even Japanese knives. If a knife no longer cuts a tomato by its own weight, it should be sharpened. It is a real pleasure when the blades of Japanese kitchen knives have been brought back to their original sharpness.
Kentaro Onishi showed us the craftsmanship of traditional sharpening in simple and practical steps, so you can bring the blade of your own knife to the old sharpness and maintain the sharpness for a longer period.

Join this hands-on workshop to stitch your name in Katakana on a one-of-a-kind bag handmade by Azuma Fabric.
No experience needed—just bring your curiosity and creativity.  Azuma Fabric will guide you every step of the way in this fun, hands-on cultural experience.

The workshop will be led by Kazuko Azuma, founder of Azuma Fabric, who will be visiting Switzerland for the very first time from Japan for this special exhibition and workshop at Haraiso.
With a background in interior styling, furniture design, and traditional Japanese textile techniques, she creates unique, functional pieces that blend craftsmanship with contemporary design.
